On July 1, 1995, Amy took over Potter's Restaurant in Mosheim after
Powell and Carole Potter retired the last day of June. At the age of 21, Amy, who worked at the restaurant since she was in her teens, decided to continue the tradition the Potter's started 30 years earlier.

For a while after opening, Amy kept the original Potter's Restaurant name. Then 6 months after taking over ownership, she renamed the restaurant Amy's Kitchen.
